  • 100g currants
  • 1 large squeezed orange
  • the zest of 1 orange
  • ½ lemon
  • 450 grams of sugar
  • 400 ml of water
  • ½ vanilla powder
  • 1 egg
  • ½ tablespoon Cointreau


Put the sugar, water and vanilla powder in a saucepan and mix these ingredients over low heat until well blended. Turn up the heat to medium when the sugar has melted and boil the mixture until the volume has reduced to about half the amount you started with. Remove the mixture from the heat and let it cool. Now heat the currants and orange juice for about 10 minutes on a low heat, then mix everything together well with an electric mixer. Add the mixture of sugar, water and vanilla powder and grated rind of the orange and mix together well. Leave to cool for about 1 hour in the freezer. Meanwhile, separate the egg whites from the yolks and beat the egg in a foamy mass together with Cointreau. Add this to the cooled mixture and put it back in the freezer. Remove the sorbet two or three from the freezer and mix everything well so that it remains homogeneous. Remove the sorbet from the freezer ten minutes in advance and spread the ice in two tall glasses, one for your loved one and one for you.
